Apple Pie French Toast Bake

Ingredients
  

  • 1 loaf of brioche or challah cut into 1-inch thick slices
  • 4 eggs beaten
  • 1 2/3 cups milk
  • 1/4 cup sugar
  • 1 tablespoon vanilla extract
  • 4 cups granny smith apples peeled and cut into cubes (set aside 1 cup for topping)
  • 1 tablespoon cinnamon
  • 1 teaspoon nutmeg
  • 1/4 teaspoon ground ginger

Instructions
 

  • In a bowl, toss the apples, cinnamon, nutmeg and ginger together. Set aside.
  • Add the slices loaf of bread to a lightly greased baking dish. Add spoonfuls of the apples between each slice of bread and more apples on top.
  • In a large bowl, mix together the eggs, milk, granulated sugar, and vanilla.
  • Slowly pour the mixture over the bread making sure to cover all of the bread.
  • Allow the bread to soak for at least 30 minutes or cover and chill in the refrigerator overnight.
  • Add the extra apples to a pan with a tablespoon of butter and honey or brown sugar to taste. Cook just until tender. Cool and store in fridge in an airtight container.
  • Cover and chill in the refrigerator overnight. Warm before serving.
  • To bake, preheat oven to 350 degrees.
  • Uncover the french toast and bake uncovered for about 45 minutes or until a knife inserted into the center comes out clean and you can see that the bread at the bottom the dish has browned (if baked in a clear glass dish).
  • Top with warm apples and other toppings of your choice.
