In a bowl, toss the apples, cinnamon, nutmeg and ginger together. Set aside.
Add the slices loaf of bread to a lightly greased baking dish. Add spoonfuls of the apples between each slice of bread and more apples on top.
In a large bowl, mix together the eggs, milk, granulated sugar, and vanilla.
Slowly pour the mixture over the bread making sure to cover all of the bread.
Allow the bread to soak for at least 30 minutes or cover and chill in the refrigerator overnight.
Add the extra apples to a pan with a tablespoon of butter and honey or brown sugar to taste. Cook just until tender. Cool and store in fridge in an airtight container.
Cover and chill in the refrigerator overnight. Warm before serving.
To bake, preheat oven to 350 degrees.
Uncover the french toast and bake uncovered for about 45 minutes or until a knife inserted into the center comes out clean and you can see that the bread at the bottom the dish has browned (if baked in a clear glass dish).
Top with warm apples and other toppings of your choice.
