Watermelon Blueberry Salad Recipe

Ingredients
  

  • 4 cups cubed watermelon cut into about 1-inch pieces
  • 1 cup fresh blueberries
  • 2 tbsp fresh mint leaves chopped
  • Juice of 1 fresh lime
  • zest of 1/2 fresh lime
  • 1-2 tbsp fresh mint leaves finely chopped
  • Pinch of salt

Instructions
 

  • Cut the watermelon into bite-sized pieces. If you're using a whole watermelon, you can cut it into slices and then cube it. You can also buy it pre-cut like I did! Place the cubed watermelon in a large bowl.
  • Rinse the blueberries thoroughly and drain them. Add them to the bowl with the watermelon.
  • Finely chop the mint leaves. Save a few for garnish. Add the chopped mint to the bowl with the watermelon and blueberries.
  • Add the zest of half of the lime. Then squeeze the juice of the lime over the salad.
  • Add a pinch of salt.
  • Gently toss everything together to ensure the fruit is evenly coated with the lime juice and mint.
  • Place the salad in the refrigerator for about 15-30 minutes to allow the flavors to come together and the salad to chill.
  • Serve: Just before serving, garnish the salad with a few more fresh mint leaves for a pop of color and extra flavor.
