This strawberry stuffed French toast takes classic French toast to the next level—crispy on the outside, soft and fluffy inside, and bursting with a creamy strawberry filling. Finished with fresh berries and a drizzle of syrup for the perfect bite!

Strawberry Stuffed French Toast

Ingredients
  

  • 1 loaf of Cream Cheese Brioche cut into 1-inch thick slices
  • 1 16 oz container of fresh strawberries sliced (save some for topping)
  • 3 large eggs
  • 1 1/4 cup milk (I used oat milk)
  • 1/4 cup heavy cream (if you don’t have heavy cream, add another 1/4 cup of milk)
  • 1 tsp vanilla extract
  • 1 1/2 tablespoon cinnamon
  • 1 teaspoon nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 cup sugar
  • 2 tbsp butter for cooking
  • Maple syrup powdered sugar, or whipped cream for topping (optional)

Instructions
 

  • Arrange half of the bread in a large baking dish.
  • Top each piece of bread with sliced strawberries, then place another slice on top to create a sandwich.
  • In a shallow bowl, whisk together the eggs, milk, cream, vanilla extract, cinnamon, nutmeg, ginger, and sugar.
  • Smash down each stuffed sandwich and dip it into the egg mixture, making sure both sides are coated without getting too soggy.
  • Heat butter in a non-stick skillet over medium heat. Cook each stuffed French toast sandwich for 3-4 minutes per side until golden brown and crispy.
  • Plate your French toast, add extra fresh strawberries, and drizzle with maple syrup. Sprinkle with powdered sugar or add a dollop of whipped cream.
