Chicken Taco Lettuce Wraps
Craving tacos? Seriously, when am I not craving tacos! Sometimes I like to mix it up by making these chicken taco lettuce wraps. They are healthy, fresh, and simply delicious. Moist grilled chicken seasoned with a special blend of taco seasoning and topped with fresh tomatoes, avocado, and cheese, and finished with a zesty cilantro sauce. Enjoy them for lunch, dinner, or an afternoon snack.
Before you start, here are a few things to note…
- I used butter lettuce, also known as bibb lettuce. It’s tender and melts in your mouth, hence the name. It’s perfect for this recipe because, unlike crunchy lettuce, it doesn’t snap when you bend it. Romaine is another lettuce you can use to make this recipe.
- You can use store-bought taco seasoning, or you can try my homemade blend. It’s made with spices and herbs that you probably already have in your kitchen. And it only takes a few minutes to make.
- I prefer to cook the chicken on a grill, but you can also prepare it in a skillet. If you have a large chicken breast, I suggest you butterfly before cooking. First, lay it flat on a cutting board. Then use a very sharp knife to slowly cut horizontally through the breast into the long, thick side. Next, open it up and cut down the middle. Now you will have two much thinner chicken breasts.
- The cilantro sauce adds a refreshing flavor that will take your chicken taco lettuce wraps to another level of goodness. You can use Greek yogurt, sour cream, or mayo to make your sauce. And if you like it spicy, add some jalapeno too!
Chicken Taco Lettuce Wraps
Ingredients
Chicken
- 1 lb chicken breast
- 1 container butter lettuce
- 2 tablespoons olive oil
- 2 cloves minced garlic
- 1 diced tomato
- ¼ diced red onion (optional)
- 1 diced avocado
- ¼ cup cheese (cheddar or Mexican blend)
Taco Seasoning
- 2 tablespoons chili powder
- 2 teaspoons ground cumin
- 2 teaspoons paprika
- 2 teaspoons garlic powder
- 1 teaspoon dried oregano
- 1 teaspoon onion powder
- 1/2 teaspoon fine sea salt
- 1/2 teaspoon black pepper
- ¼ teaspoon crushed red pepper flakes (optional)
Cilantro Sauce
- ½ cup sour cream
- ½ cup fresh cilantro
- 2 tablespoons olive oil
- Juice from ½ of a fresh lime
- 1 clove fresh chopped garlic
- Dash of salt
- Dash of pepper
Instructions
- Add taco spices to a small airtight container. Seal container and shake well to blend spices.
- Add the chicken, garlic, olive oil, and taco seasoning to a gallon size sealable bag. Let the chicken marinate for at least 20 minutes or up to 24hours.
- Remove chicken from marinade and place on a grill or skillet on medium heat. Let chicken cook until it is no longer pink on the inside, about 8-10 minutes on each side. Remove from grill and let the chicken rest for 5 minutes. Slice in to ½ inch cubes and set aside.
- To make the cilantro sauce place all the ingredients in the food processor and blend for 1 minute or until creamy.
- Rinse lettuce and gently pat dry. Layer lettuce wraps with chicken, tomatoes, onion, avocado, and cheese. Drizzle with cilantro sauce and serve immediately.
